Liechtenstein, deer me!

Guten tag,

Liechtenstein is a small country in Europe where we decided to have our first taste of deer,pepper venison with Käsknöpfle. The meat in itself was an experience with numerous visits to various butchers and supermarkets before finally locating it at the Prahan markets in Melbourne, at $39.99 a kilogram it isn’t all that cheap but still over a 40% discount to lobster.

The deer was marinated in fruit vinegar, red wine and other spices for almost a week. It was then boiled in wine with various spices.


 The Käsknöpfle was made with a mix akin to dumplings, we made the balls a bit too large and so it did not turn out as expected.

The deer was extremely soft and tender however some of the flavour was lost in the overpowering taste of vinegar and wine.
